    A Daily Paper for Bakers and Dessert Lovers

    The Pantry Co. is a daily paper of record for the world of baking and desserts. We exist to celebrate the craft — the recipes, the bakers, the bakeries, the techniques and the ingredients — and to put a global pastry culture into one beautifully made publication every morning.

    A laminated croissant in Paris, a milk bread in Tokyo, a malva pudding in Cape Town, a basbousa in Cairo, a lemon meringue in a small-town American diner — they are all part of the same conversation. Bakers everywhere are reading each other's recipes, borrowing each other's techniques, and reinventing classics on each other's countertops faster than ever before.

    The Pantry Co. was built to follow that conversation in real time. Every day we publish original recipes, profiles of the bakers shaping today's pastry world, city-by-city guides to the bakeries worth a detour, deep-dives on technique and ingredients, and the news, trends and openings that the dessert world is talking about right now.

    Recipes You Can Actually Bake

    Every recipe we publish is written to be made — not admired. That means weight measurements as well as cups, real prep and cook times, the small specifics that decide whether a dough laminates or splits, and the honest notes a working baker would tell you over the bench: don't skip the rest, the butter has to be cold, the oven runs hot in the back.

    We test classics until they are reliable, and we publish new bakes only when they are worth your butter. When a recipe comes from a chef or a tradition we did not invent, we say so, and we link to the source.

    Spotlight on the Bakers

    Behind every great bake is a person — often working unsociable hours in a hot room for not enough money. We profile the pastry chefs, home bakers, and bakery owners shaping today's dessert scene: their training, their signatures, their failures, and what they're working on next. Famous and unfamous. Three-Michelin-star and Tuesday-morning-farmers-market.

    Bakery Guides for the Long Way Home

    Our Bakery Locations section is a slowly-built atlas of where to eat: the croissant in the 11th arrondissement worth the queue, the bagel in Montréal that justifies the airfare, the pop-up in Mexico City that only opens on Saturdays. Real names, real cities, real specialties. We update them when bakeries change, and we let you know when we are wrong.

    Technique and Ingredient, in Plain Language

    Lamination, tempering, hydration, tangzhong, brown butter, custard rescue, sourdough crumb, single-origin chocolate, the year's vanilla market — the language of baking is rich, and we use it confidently. But we also explain it. The first time we mention a tangzhong we say what it is. The next time we trust you to know.

    A serious baking paper has an obligation to teach as much as it reports. We treat the reader who has never made a pastry cream with the same respect as the head pâtissier of a hotel kitchen. The vocabulary of baking should be a door, not a wall.

    Desserts Are Cultural Objects

    A pavlova carries a quiet diplomatic dispute between Australia and New Zealand. A pasteis de nata carries the history of a Lisbon monastery. A mochi donut carries a hundred years of Hawaiian-Japanese kitchen traffic. Our Desserts of the World section treats sweets as the cultural objects they are — written about with curiosity, accuracy, and a willingness to credit the people they came from.

    What We Are Not

    We are not a hot-takes site. We are not interested in dunking on home bakers, or in the kind of food writing that confuses cleverness with care. We do not pretend a bake is good if it isn't, and we do not pretend a bakery is undiscovered when half the city already lines up at it.

    We are equally uninterested in food snobbery. A Tuesday-night box-mix brownie made with a child is a baking story too. The point of a pantry is that everything that comes out of it is allowed.

    Our Standards

    Tested recipes. Sourced facts. Named bakers. Opinions clearly labelled. Corrections published in plain sight. We assume our readers can handle a long method, a metric weight, and a real opinion — and we try not to waste their time.

    An Invitation

    The world is baking more than it ever has, and reading more about baking than it ever has. The Pantry Co. exists to be the daily paper for that conversation — warm, well-tested, internationally curious, and useful in the kitchen the morning after you read it.
